Will it work on my knives?
It works on straight-edged kitchen knives: chef's knives, santokus, utility knives, carving knives and most paring knives. Very small paring knives can be fiddly to keep aligned. It is not designed for serrated bread knives or scissors.
Which angle should I use?
Use 15 degrees for Japanese-style knives, which have a finer edge, and 20 degrees for Western and German knives. If you're not sure what you own, 20 degrees is the safe default and covers most kitchen knives sold in this region.
Do I need to know how to sharpen?
No. The blade is held at a fixed angle for you, so there's no technique to learn and no way to hold it at the wrong angle. Set it up, run a few passes, done. Most people get a sharp edge on their first attempt.
Will it damage or wear down my knives?
No. It removes only the small amount of steel needed to restore the edge, and there's no motor, so there's no friction heat to affect the temper of the blade. That's the opposite of what electric and pull-through sharpeners do.
How often should I use it?
For most home kitchens, once every month or two is plenty. A good test: if a ripe tomato skin resists the blade instead of giving way, it's time. Sharpening more often than needed just removes steel for no reason.
